Tasting commentary by Yves Beck on theth vintage 2021

Precise and subtle, the bouquet reveals many nuances, including notes of black tea and licorice, followed by a touch of peony and, finally, elderberry. Precise, compact tannins on the palate. A powerful wine that deserves a little cellaring and, if you want to drink it young, at least 1 hour in a decanter.

Les Foll'terres - Fully

Gasting commentary by Yves Beck on the 2020 vintage

Subtle and complex, the bouquet begins with notes of violets, graphite and chocolate. Allowed to breathe, it reveals spicy nuances with black pepper as well as a chalky touch. On the palate, the wine displays density, power and, above all, temperament. In a more basic language, we will say that it has watts or that it has some under the hood! And, icing on the cake, it also displays a convincing notion of quiet strength... A wine of character to follow in its evolution.

The 1964 - Conthey

Tasting commentary by Yves Beck on theth vintage 2019

Cab3 is the result of three wines vinified separately by three winegrowers: François Défayes, Nicolas Jacquier and Vincent Papilloud. Once vinification is complete, the three wines are blended and then aged for 18 months in barrels. The 2019 bouquet is complex. It reveals chalky nuances, flint notes and raspberry scents. Allowed to breathe, the varietal character of Cabernet Franc is revealed with notes of violets. Like the nose, the palate has character. Its tannins are buoyant but not overpowering. Very precise, they are in perfect harmony with the acid structure. The latter underlines the tense and juicy character of the wine and ensures a good aging potential. A wine that reveals itself slowly and stands out for its harmony as well as its density and persistence.

Hangar41 - Sion

Tasting commentary by Yves Beck on the 2018 vintage

Just the cork, of high quality, underlines the ambitions, underlines that we want to give the maximum of means to this wine. The bouquet is very subtle, filigree and calls for taking some time for it. It reveals notes of peat, cocoa beans and liquorice wood. Earthy undertones with a bit of red roots. Over the minutes it displays an obvious complexity through floral, fruity notes and a refreshing touch of peppermint. On the palate, the wine is distinguished by its also very subtle way of presenting its properties. It has body, flesh and, above all, precise tannins, able to last over time. A little patience is required so that the wine can flourish. It still lacks aromatic expression on the finish. Time will settle this. A high-level Cabernet Franc that lives up to its name “Cab power 3”
